Pork ham goulash with champignons
Today, we’ll show you how to easily and quickly prepare a dish that not only delights with its flavour but also provides a boost of energy on chilly days. Long evenings, short days, the cold outside, and the last yellow leaves clinging to bare branches are clear signs that autumn has fully settled in. The autumn atmosphere often affects us with a drop in energy and lack of motivation. It’s also a time when we tend to change our eating habits, reaching more eagerly for hearty meals—many of which can be quite complex and time-consuming to prepare.
How to make pork ham goulash
Pork ham goulash is a fragrant and hearty dish that’s perfect as a family dinner. Although the cooking process takes some time, it's relatively simple. You can easily prepare a large, satisfying portion that will last for several meals.
Ingredients
• 500 g pork (ham)
• 2 onions
• a few champignons
• 1 red bell pepper
• 1 cup vegetable broth
• salt
• pepper
• bay leaf
• 1 garlic clove
• 2 allspice berries
• ¼ teaspoon sweet paprika
• 2 dried mushrooms
• oil for frying
• optional: 1 teaspoon flour (to thicken the sauce)
• 2 onions
• a few champignons
• 1 red bell pepper
• 1 cup vegetable broth
• salt
• pepper
• bay leaf
• 1 garlic clove
• 2 allspice berries
• ¼ teaspoon sweet paprika
• 2 dried mushrooms
• oil for frying
• optional: 1 teaspoon flour (to thicken the sauce)
Preparation
Cut the cleaned pork into goulash-style cubes, the peeled onion into small cubes, the mushrooms into thick slices, and the bell pepper into strips. In a pot, heat 2 tablespoons of oil and gently fry the onion with the garlic pressed through a garlic press. Then add the meat and quickly sear it on all sides until just firm—this will keep it tender and juicy.
Next, add the mushrooms and bell pepper. Stir everything together and fry briefly, then pour in the vegetable broth. To enrich the flavour and aroma, add the bay leaf, allspice berries, and two crumbled dried mushrooms. Simmer the mixture with the pork over low heat, covered, for about 40 minutes, stirring occasionally.
Towards the end of cooking, season the goulash with salt, pepper, and sweet paprika. If the sauce doesn’t thicken enough, you can add a little flour dissolved in cold water, stir, and cook for a few more minutes

What to serve pork goulash with champignons
The best goulash is one that pairs well with a variety of sides. One popular choice is Hungarian style potato pancakes. The U Jędrusia company offers this tasty side dish, known for its high quality and traditional recipe developed over the years. The pancakes are made with carefully selected ingredients and contain no preservatives. To prepare them, heat a frying-pan with a spoonful of oil, and when it starts to sizzle, fry the pancakes until golden on both sides. Transfer them to a plate and pour the goulash on top.
In addition to potato pancakes, pork ham goulash also tastes great with Silesian potato dumplings, whose delicate flavour beautifully complements the rich aroma of the sauce. Prepare the dumplings according to the package instructions and serve them with a bowl of hot goulash.
Other tasty sides include steamed dumplings, square potato dumplings, or even groats and potatoes. Each of these options highlights the tenderness of the meat while making for a nutritious and delicious dinner. Enjoy!
